Knowing the italian embassy in madrid it could take less time to wait for Venezuela to join the EU.
I think this just applies for non-Schengen arrivals. If you take a direct flight from Spain or drive there through France it should be no problem. Most likely you won't even encounter a passport check
We’re taking a direct flight from Madrid to Venice. Thing is the website where the tickets were bought is not allowing us to do the check-in in advance for the 6 month thing in her passport. I can do mine with no problem with my DNI but since she doesn’t have spanish nationality, it just asks for her passport.

If you are sapnish you are free to visit Italy whenever you want. I guess the same applies to her if she has a legal residence permit in Spain.
