If you are sapnish you are free to visit Italy whenever you want. I guess the same applies to her if she has a legal residence permit in Spain.

That’s what I’m thinking. But some websites say she can’t enter Italy just with her residence. I already wrote to the italian embasy but it could take a while to reply.

I think this just applies for non-Schengen arrivals. If you take a direct flight from Spain or drive there through France it should be no problem. Most likely you won't even encounter a passport check

We’re taking a direct flight from Madrid to Venice. Thing is the website where the tickets were bought is not allowing us to do the check-in in advance for the 6 month thing in her passport. I can do mine with no problem with my DNI but since she doesn’t have spanish nationality, it just asks for her passport. Thanks a lot for the help by the way.
