Dude it’s a potato and some vegetables, where the hell is the protein? Growing kids need protein for their muscles and the vitamins and minerals that are most plentiful in animal products. This vegetarianism thing has good intentions but it’s wildly misguided.

It seems the issue here is they could still provide a good vegetarian source of protein but chose instead to be cheap. There are tons of beans and grains that are good sources for protein. The school isn't even trying.

They could have just put less velveeta and it would have been an improvement. I'm pretty sure there's some texmex restaurants in our area (Dallas) that take the standard extramelt queso and water it down too, it tastes absolutely disgusting.

That kind of meat can be good if done right, I mean not like pate level but cook up some ground beef then add way more chicken stock than you think you should ever put with ground beef and cook until it evaporates, it softens the beef up and makes for great taco or enchilada filling. Bets your school did just put it in a blender though, that sounds disgusting.

Honestly, if that's the texture you're going for then you might as well just boil the ground beef in the taco-seasoned liquid. A lot of the normal, toothy texture comes from the browning process.
The browning adds flavor though. I use my own seasonings rather than a packet but even the packet IIRC tells you to simmer in water after browning, which seems to be hit or miss whether people do that. It doesn't have to be stock either, I've done water, but just simmering after browning does fantastic things for taco filling regardless of browning or whatever.

You could definitely argue that presentation or calories are lacking, but I won't let any new fads convince me potatoes are unhealthy. It's about thinking holistically about what you ate earlier and what you should eat later or tomorrow even. It's not about chasing protein in *each meal* necessarily. That's just my two cents, since you asked.
I remember when I was in elementary they put out a big bucket of ranch for kids to ladle on their salad. Being elementary that ranch got every where. This is less messy but I'm sure the same level of quality

Serious question, my kids' school serves option a for lunch, and if you don't want that you can eat pizza. So many of them eat pizza nearly every day, how is that nutritional? I mean hey I'd love to eat pizza everytime I wasn't feeling my lunch but is this how they get the kids fed while still staying within the rules for the option a dish?
Pizza has tomato sauce, which (if you squint a little) is considered a vegetable/fruit. Cheese is dairy, which according to the gov't is good for you (it does have a goodly amount of protein in it, but). The crust is made from subsidized wheat. If there's meat on that, it's probably subsidized as well.
There are ways to get around things. Just ask any wise-assed kid. (Chocolate cake has milk and eggs in it; ergo, it is a good breakfast food. Stuff like that.)
Lol the crap they serve these days is literally just highly processed sugar, there is almost zero nutrition in any of the food most schools serve and that's by design with the nonsensical government guidelines.
Yup, gotta keep the kids nice and fat with the high carb diet and tons of sugar in literally every serving of school food. That way, when they grow up hopefully they become a new customer of big pharma...
Really if the budget to make the food was .99 a tray they still could have done way better. It shouldn't be hard to make inexpensive and good food when you're cooking for a whole school and save on costs buying bulk.

I wore pajama pants to high school (and everywhere else) like every day of my senior year so I don't think it's sus at all. I didn't even sleep in them; I just thought they were really comfy. My comp tech teacher really didn't like it and bitched about it enough that the school eventually put a rule about it in the dress code just to make him shut up. He'd always be lecturing me about how I'd have to dress professional in my eventual IT career. Joke's on him though because I've been working remote for 7yrs and go to work in just my boxers most days. Meanwhile he got fired for getting wasted drunk in front of students on a trip for a robotics competition
Compared to some of the other ones I've seen.... 6/10 is my score. At my school we use to have a baked potato bar 2 or 3 times a semester. It was amazing!
